B.A.’s Coconut Cream Whip
yes, folks, this is a “Whole 30” compliant recipe.
No sugar, No Dairy & Gluten free!
You can use this in your coffee as a creamer replacement. You may use this as a topping for your fruit, sweet potatoes, beets or anything else you can think of, the sky’s the limit!
I hope in the future to create a tasty little desert with this but until that time arrives, let’s just keep it compliant.
What you will need;
4 chopped, pitted dates
1 can of coconut cream (not milk)
2 tablespoons of rx almond nut butter
cinnamon
a blender, hand held or counter top
medium sized bowl

Directions for making B.A.’s Coconut Cream Whip
- Empty one can of coconut cream into a medium sized container and mix until the liquid portion is mixed in with the cream portion.
- Add chopped dates
- Add in the two tablespoons of RX Almond Butter (that made need stirring first)
- Sprinkle in your cinnamon. (I use 1/2 teaspoon. You can always add more later.)
Then use blender to mix thoroughly. The mixture will fluff and not be as dense as your coconut cream. I think this is a plus as it is a way to ration out my nut butter (that stuff is a bit pricey) and to keep my fat calories down from the coconut cream.
Store in refrigerator in an airtight container. Trust me, it will be gone before it even thinks of expiration!
Adjustments to B.A.’s Coconut Cream Whip Recipe
This recipe is suited to my taste and needs. You may want to use less or more cinnamon, go for it. If you want it sweeter or less sweet, use more or less dates. Maybe you want it more or less creamy, add or use less coconut cream. If you would like it nuttier in flavor, or less, just adjust your RX Almond Butter. If you are using this whip as a coffee creamer; the more almond butter you use, the more sediment will be left in the bottom of your cup,
“Whole 30” compliant
Yes, the ingredients are compliant for the program, however, if you are doing the “Whole 30” reboot, I might not recommend using this. The dates are used as a sweetener and is a no, no on their guidelines for reboot. If you are going to use it, just be mindful of the date and almond butter usage. Or better yet, save it for after the reboot, you are worth the wait!
