Balsamic Eye of Round ~ sit down!!!!

OH EMMMM G!! Balsamic Eye of Round.
We were so excited to try this Balsamic Eye of Round, I forgot to cook the green beans!!! It was off the chain. I never thought this cut of meat could become so tender! Five stars in this house!!!
- 3-4 lb or eye of round (trimmed the fat off)
- Use 1 regular sized can of beef broth
- Add 1 cup of balsamic vinegar
- 1 1/2 tablespoon worst shire
- Use 1 1/2 tablespoon soy sauce ( i used low sodium)
- 1 1/2 tablespoon of honey
- 4 cloves of garlic
- 3-4 springs of rosemary
- 3-4 sprigs of thyme
- 1 teaspoon of red pepper flakes
DO NOT cook vegetables with meat. They get too vinegary.
Place meat in slow cooker
In a separate bowl, mix balsamic, worst shire, soy sauce, honey, garlic, red pepper flakes and and then poor over meat. Add sprigs of rosemary and thyme (helps to sing that part) Cover cook on low for 6-8 hours. It is too early if you pull the meat out and it does not fall apart.
♦◊♦ If you pull it out and the meat does not fall apart, It will seam like you over cooked it. DO NOT STRESS. It just needs more time to cook.
For the last 30 min of cooking time,
- roast veggies. Preheat oven 425.
- I cut up organic rainbow carrots and sweet potatoes. (I tried the red potatoes but found the sweet MUCH better. Just rounded out the flavors)
- lightly coat with olive oil, salt and pepper.
- Roast for 30 min.
While that’s going down,in the last 10 min, take some of the liquid out of the crock pot. Separate the oil. (Apparently there is an oil separator out there! I just did the best that I could with a paper towel.) Discard the oil and simmer remaining liquid. Reduced the liquid by half this way
Your meat should be so tender it just falls apart with a good fork separation technique. (Like pulled pork). Smash your potatoes, add carrot pieces, place meat on top and drizzle reduction!
The intent was to share with the neighbors. John said no, they can’t have any! Guess we will call this a winner!!!
