BA’s Split Pea Soup Recipe
Every cook knows; every dish is only going to be as good as the ingredients that have been used! Hey, I’ve seen Chef’s Table!!! I joke but it is a rule I live by and it has proven me a winner time and time again and this BA’s Split Pea Soup recipe is no different!
My significant other and I spent a long weekend up in TN at Meriwether’s Retreat. While there, I was gifted a jar of this AMAZING Carolina ham and I found an Amish shop, Yodder’s, selling split peas. Well, a bunch of other stuff too but that’s for another blog! I carted my treasure home and waited for a cold and dreary day.

Knowing nothing of Pea Soup or how to make it, I started reading through my cookbooks; 1 Stock, 100 soups, 12 Months of Monastery Soups and my Medieval Cookbook. This is how BA cooks. I read, deliberate, ponder and execute.
Without further adieu, I give you BA’s Split Pea Soup. It has been approved and given 5 stars by my very own lover of Split Peas Soup, The MIGHTY John McKnight.
INGREDIENTS for BA’s Split Pea Soup;
- One medium onion
- 3 garlic cloves
- One apple (peeled, cored, chopped)
- 1 & 1/4 cup of ham, chopped
- 4 cups or 1 quart of broth ( I make my own (turkey) but store bought is fine (chicken))
- Dried peas, 1 lb. (I soaked mine overnight)
- 1 tablespoon of butter
- 2 tablespoon of fresh mint (I would add more next time)
- black pepper & salt (to your taste)
- 1/4 cup of half & half
- lemon
- 2 tablespoons of sugar in the raw (you can use the white stuff)
- dollop of sour cream as garnish for each bowl.
Don’t be like me and have a delay of game on your soup, because you didn’t read the instructions on your dried peas. They will have to soak overnight. Wa Wa Waaaaa!
Let’s Get This Party Started!
Instructions for preparing BA’s Split Pea Soup;
- In a large pot, melt your butter, add you onions (chopped) garlic (minced or crushed, whatever)
- When garlic & onion have turned golden, add split peas (rinsed), apple (peeled, cored & chopped), broth, 1/4 cup of the ham (chopped) and mint. Bring to a boil, then drop to a simmer and let simmer for two glorious hours.
- After two hours, very carefully puree entire contents of the pot and return pot and contents to the burner.
- Add to the puree mixture, the half & half, the rest of the ham (chopped), add the sugar, zest your lemon and add to pot, then take the juice of the lemon and add that to the pot. (ZEST YOUR LEMON FIRST PEOPLE) Bring it to a simmer, let everything get friendly for 1/2 hour and you are ready!
- Salt and Pepper to taste.
- Garnish with Sour Cream (I actually just did this as an afterthought and WOW! )
