Crock-Pot Turkey Recipe ….it’s magic
I CAN NOT begin to tell you how amazing this Crock-Pot Turkey Recipe is! Forget your mom’s turkey…… Mind blown. This is to die for Turkey in a crock pot, with gravy that is well worth killing for. The roasted sweet potatoes, carrot concoction just ties it all together and will have you wanting seconds. Oh and peas, because I feel guilty if there is nothing green on the plate.
With Turkey on sale right now, I thought I would try my hand at cooking one, well part of one. I found a missed marked sale and bought a turkey breast for three bucks. hahahah. They tried to say 10.99 but I said… ummm, that’s not what the sign says. SCORE, you snooze you loose Kroger!!.
I have never cooked a turkey and I have never made gravy but I looked over a couple of recipes and thought, “that just does not seem hard at all”. I came up with my own recipe by throwing together what I had in the pantry.
Take a well thawed turkey, peel the skin back and rub down all sides with a rub, lay skin back in place and put some rub on that too.
Rub: onion soup mix, 1 tablespoon of paprika, 2 tablespoons of olive oil. Or, honestly, whatever you like.
Crock-Pot Turkey :
Cut an onion in half place both halves down in bottom of pot. Take two large cloves of garlic, slice long way down the middle and place in bottom of pot. Take your turkey breast and place this on top of the onion and garlic. The idea is to have the turkey suspended and not in contact with the bottom of the pot. Cover and cook for 6 hours. Yep… that’s all you do.
Sweet potatoes and carrots:
During the last 40 min of crock pot cooking, I start this step. I used the organic color carrots. They seem super sweet to me and give the dish an added dimension. First preheat the toaster oven, I do 370 but I think my toaster oven is off, you might try 350. Peel and chunk you sweet potatoes, throw them in a bowl, mince up a garlic clove, drizzle some olive oil, add salt and black pepper and a hint of cinnamon, toss to coat evenly. Throw in pan and cook for 20 min. While that’s going down, peel and cut carrots. After sweet potatoes have cooked 20 min, take out, add carrots, stir and throw back in the toaster oven for another 15 min.
Peas:
follow the package.
Gravy Time:
Now the Turkey should be wrapping up in the crock pot and it’s gravy time. Take the turkey breasts out, I put them on a dish sitting on the toaster oven, to keep warm.
- In a skillet melt two tablespoons of butter. Add in 1/4 cup of flour, briskly stir.
- Strain liquid in the bottom of the crock pot and in the strainer mash up the onion and garlic to extract all the flavors. You should have about 2 cups of liquid, if not you might have to add water at the end of the gravy making.
- Add this liquid to your flour, butter mixture.
Last 5 min of the sweet potatoes / carrot cooking, take pan out make room for the turkey and throw it back in to crisp up the skin on the turkey.
Take out and plate up. I added parsley for garnish and I like that hit of light green, fresh flavor.
I CAN NOT
even begin to tell you how tender, juicy and flavorful this turkey was. It did not even need the gravy. But oh my god…. that gravy. This gravy seriously blew me away. Personally, I don’t even like gravy!! I swear, it’s as good as cupcakes!!! It was amazing,
