Red Fish, Shrimp & Chorizo Recipe

It’s my mom’s birthday tomorrow, so I thought I would make a dinner celebrating in her name. Red Fish, Shrimp & Chorizo goodness seemed pretty perfect!

What we have here is; fresh caught, red fish (by Glenn ) and fresh gulf shrimp that we bought right off the boat and cleaned ourselves. It’s a very simple throw together recipe that will have everyone asking for seconds and thirds. Well, John did anyway!

♦◊♦ This menu calls for pasta.

This go around, I used a pumpkin sage ravioli but you can use whatever you prefer. Just remember, when choosing a pasta, pick one that holds sauce. Nobody will not want to miss a drop of this creamy goodness.

 

Cooking fish and Shrimp, is like the mad dash to the finish line.

Be light on your feet people. Pay attention because this will fly by. Fish and shrimp are a very quick cook and don’t need a lot of time on the heat. Having things lined up and ready to move, will help tremendously.

  • In a skillet; add a small pat of butter, a quarter of an onion, diced, a little over a tablespoon of chorizo (more or less if you like) . cook it all down.
  • Start water boiling for pasta
  • Rinse, pat dry and take the skin off of two filets and cut them into four sections add to skillet and cook for 4 min..
  • After four min., flip the fish, then add peeled and cleaned shrimp, 1 lb
Halfway there, here is the finish line
  • The water for the pumpkin sage pasta ravioli (that’s what I used this time) should be boiling somewhere during all this, add pasta and cook for 8 min. (or cook per instructions of whatever you are using)
  • Flip the shrimp in the pan after the first min or so.
  • When the Shrimp and fish are cooked, add in cream. Start with a 1/4 of a cup, you can always add more if you like. Bring to a simmer. Stir a couple times till it’s thick.
  • Drain pasta, add to shallow bowls, add fish and shrimp concoction.
  • Garnish with parsley….. and you are done! Clink Clink! 
  • True Blue salad in a bag for a quick side.

Be sure to have a paper towel ready when your boyfriend’s eyeballs roll out of his head and onto the floor.
